Savory Greens and Protein to Go

I’ve been making variations of this dish for many years and recently had this Turkish version at Turku restaurant in the Fremont neighborhood of Seattle.  I serve this for breakfast or any meal.  It’s perfect for picnics or a potluck since it’s tasty warm or at room temperature.  Every bite delivers a substantial serving of folate and vitamins A, C and E.

4-5 large eggs

1 package frozen organic spinach (thawed and drained)

2/3 cups mixed fresh herbs chopped parsley, cilantro or basil

8 scallions chopped finely

1 tsp sea salt

¾ tsp freshly ground pepper

2 T butter

Directions:

Preheat oven to 350°F.

Grease a 8x8 baking dish with butter. Whisk together eggs, salt, pepper.  Mix in spinach, fresh herbs and scallions.  Pour the mixture into the dish and bake for 15-25 minutes or until the center is firm.  Let rest before you cut and serve.  Enjoy!
