Cauliflower "Couscous"

What’s for Dinner Wednesday? Try Cauliflower Couscous with Lentils.

Rinse one head of cauliflower and chop into pea-sized bits (stem included).  Drizzle 1 T olive oil on a baking pan and spread the cauliflower “couscous” evenly.  Lightly salt.  Bake for 35-40 min at 375 degrees. 

Bring two cups of water with one cup of lentils to a boil.  Reduce heat to simmer for 20 minutes, stir once or twice.

Combine the cauliflower and lentils and toss with your favorite dressing, sauce or spices.  Scoop mixture over a bed of greens or serve as a bed for grilled chicken, fish or any meat.
